My Menu for Week One


 Here is my week one menu if you are looking for any ideas or would like the recipes - let me know!

 
WEEK ONE MENU
BREAKFAST
- SMOOTHIES/JUICE
- ROLLED OATS WITH FRUIT AND COCONUT FLAKES
- POACHED OR HARD BOILED EGGS WITH GREENS

LUNCH
- SWEET POTATO, CELERY AND APPLE SALAD AND BUTTERNUT SQUASH SOUP
- RED LENTIL SOUP
- CHICKPEA-BROWN RICE VEGGIE BURGER
- MAYOLESS EGG SALAD WRAPS WITH AVOCADO, CHERRY TOMATOES AND RED PEPPER SAUCE

DINNER
- SHIITAKE MUSHROOMS AND BROWN RICE EN PAPILLOTE
- HALIBUT WITH SWEET POTATO FRIES AND LIME
- GRILLED SPICY CHICKEN WITH BROWN RICE AND BLACK BEANS
- LETTUCE WRAPPED FISH TACOS WITH HOMEMADE SALSA
- CEDAR PLANK SALMON WITH DAIRY FREE MASH POTATOES AND GREEN BEANS

SNACKS
- CRISPY ROASTED CAULIFLOWER
- PISTACHIO-STUFFED DATES WITH COCONUT
- CARROTS AND HUMMUS
- DRIED FRUIT AND NUT BITES

RESTAURANTS WE CAN EAT AT
- JUICY LADIES
- SUSHI RESTAURANTS – ONLY RAW FISH and VEGGIES IN SUSHI ROLLS - NO REGULAR SOY SAUCE – BRING WHEAT FREE SOY SAUCE.
- ANY WHERE THAT SERVES GRILLED FISH OR CHICKEN (I.E. PAQUITO MAS, KATE MANTILINI, SHARKY’S, CHEESECAKE FACTORY)
