First I'm going to start off with My Favorite Smoothy. (This happens to be the one I made today. Almost always I will add Kale or some kind of green into my drink, but today I went all fruit!) Here it is:
- Pomegranate seeds
- Blueberries
- Strawberries
- Kiwi
-Pinapple
-Green Apple
If you go with all fruit, like I did today, try and focus on making the rest of your meals mostly veggies.
My Favorite Snack/Side Dish - Crispy Roasted Cauliflower
Ingredients
- 1/2 head cauliflower florets
- 1 tablespoon olive oil
- Coarse salt
- Red chile flakes
Directions
- Heat oven to 425 degrees.
- On a rimmed baking sheet, drizzle cauliflower florets with olive oil. Season with salt. Roast, turning occasionally, until golden brown and just tender, about 20 minutes.
- Sprinkle with red chili flakes.
You can do this with most veggies - and it makes it SO yummy! I did a combo of baby bok choy and cauliflower last night- AMAZING!
Favorite Entree's
My absolute favorite was the cedar plank salmon, but since I already mentioned that in a past post - I will tell you about An Asian Chili-Garlic Paste to marinate most anything in, we used it on chicken last night and it was SO good! I found this recipe in a Weight Watchers magazine. Here it is:

I am feeling really good! I have lost 6 pounds so far, and I have a ton of energy from all of the fruits and veggies. I am going to try making the salmon this week, it sounds amazing!
